Clam Fritters: A Simple Holiday Treat!

Sean Hart, chef and owner of our very own Exmore Diner and Salt & Sand Family Restaurant passes along this recipe enjoyed by so many from A South You Never Ate, our Oct. 28 event that celebrated the foodways of the Eastern Shore.
Clam Fritters
1 pint chopped Seaside clams
1 large egg
4oz. finely chopped onions
1 teaspoon black pepper
1 teaspoon baking powder
1 cup all-purpose flour
2 squirts yellow mustard
Combine all ingredients in a small bowl. Be careful not to overmix.
Over medium heat, melt butter(margarine will work) in a frying pan.
Spoon mixture into the pan and cook about 5 to 8 minutes until you see the fritter begin to rise. When tiny air pockets form, flip, cooking another 3 to 5 minutes.
Remove and place fritters on a paper towel. These are best served on plain white bread with a touch of mustard.
